INGREDIENTS:
- 1 whole , Rabbit Cut in Serving Pieces
- 0 as needed , Flour
- 0 to taste , Salt and Pepper
- 2 tablespoon(s) , Bacon Drippings
- 1 cup(s) , Pineapple Juice
- 1/4 cup(s) , Vinegar
- 1 cup(s) , Pineapple Chunks
- 1 medium , Green Pepper Chopped
- 1 1/2 tablespoon(s) , Cornstarch
- 1/4 cup(s) , Sugar
- 1/2 cup(s) , Water

| Instructions: |

Dredge rabbit in mixture of flour and salt and pepper. Brown in fat in heavy skillet over moderate heat. Add pineapple juice, vinegar, and 1/2 teaspoon salt. Cover and cook over low heat 40 minutes, or until meat is tender. Add pineapple chunks and green pepper and cook a few minutes longer. Mix cornstarch with sugar and stir in water. Add gradually to pineapple mixture. Cook 5 minutes. Serves 6. |
