Sherry Roasted Doves

 Sherry is a fortified wine (alcohol added) that is used in cooking alot. It has a great taste and tenderizes the meat

INGREDIENTS:
  • 16 whole , Doves
  • 0 to taste , Salt and Pepper
  • 0 as needed , Flour
  • 1/2 cup(s) , Oil
  • 1/2 cup(s) , Green Onions Chopped
  • 1 1/2 cup(s) , Water
  • 1 cup(s) , Sherry
  • 1/4 cup(s) , Fresh Parsley

Instructions:
Season doves with salt and pepper. Roll in flour. Place in oil in a heavy roaster. Bake at 400 degrees until brown. Add onions, water and sherry; cover. Bake until tender, baste with sherry occasionally. Add parsley to gravy just before serving. Serves 8-12.
