Creole Style Flounder

 flounder is a flat fish with a nice delicate flavor, this recipe is pretty easy and doesn't take long to make.

INGREDIENTS:
  • 1 large , Green Bell Pepper Julienned
  • 1 1/2 cup(s) , Scallions Sliced
  • 2 tablespoon(s) , Butter
  • 2 cup(s) , Canned Tomatoes Chopped
  • 8 ounces , Tomato Sauce
  • 0 to taste , Salt and Pepper
  • 1/2 teaspoon(s) , Thyme
  • 1 whole , Bay Leaf
  • 1 1/2 pound(s) , Flounder
  • 3 cup(s) , Rice Cooked

Instructions:
Cook onions and pepper in butter until soft (not brown). Stir in tomatoes, tomato sauce, salt and pepper, thyme and bay leaf. Simmer 15 minutes. Remove bay leaf. Spoon over flounder. Bake at 375 degrees for 15 minutes or until flounder is flaky. Serve over a bed of rice. Serves 4-6.
