INGREDIENTS:
- 1 1/2 cup(s) , Vegetable Shortning
- 1 tablespoon(s) , Garlic Chopped
- 1 1/2 cup(s) , Flour Sifted
- 4 cup(s) , Water
- 2 cup(s) , Onions Chopped
- 1 1/2 cup(s) , Celery Chopped
- 0 to taste , Hot Pepper Sauce
- 1 cup(s) , Green Bell Pepper Chopped
- 2 cup(s) , Dry White Wine
- 1 pound(s) , Andouille Sausage
- 1 whole , Rabbit Cut in Pieces

| Instructions: |
In a large pot, heat the shortning over medium heat. Add the flour and stir constantly to make a very dark roux, about the color of mahogany wood. Add the onions, celery, and bell peppers and cook, stirring constantly, until the vegetables are tender. Add the remaining ingredients and cook, covered, until rabbit is tender, about 1 1/2 to 2 hours.
Serve over rice. |
