Smothered Calves Liver

This was my grandmothers favorite food. I'm not a huge fan but thats just preference, not that it's a bad recipe. |

INGREDIENTS:
- 1/2 cup(s) , Vegetable Oil
- 4 tablespoon(s) , Butter
- 1 large , Garlic Clove Finely Chopped
- 1/2 teaspoon(s) , Salt
- 1/4 teaspoon(s) , Black Pepper
- 1/2 cup(s) , Flour
- 2 pound(s) , Calves Liver Steaks
- 1 cup(s) , Beef Stock

| Instructions: |
Heat the oil and butter in a skillet. Sauté the garlic until lightly yellow. Combine the salt, black pepper and flour. Dredge the liver in the flour until covered. Shake off excess flour.
Fry over medium head for about 2 minutes on each side until brown.
Remove and place in a warmer. Add the onion and beef stock to the skillet and simmer until tender.
Pour the onion mixture over the liver and serve with mashed potatoes. Serves 6. |
