This is a delightfully cheesey side dish. Zucchini with monterey jack and ricotta cheese topped with bread crumbs and baked until bubbly and delicious. |

INGREDIENTS:
- 6 medium , Zucchini Cut Into Chunks
- 1 cup(s) , Ricotta Cheese
- 1 cup(s) , Monterey Jack Cheese Shredded
- 2 large , Eggs Beaten
- 1 teaspoon(s) , Dill
- 3/4 teaspoon(s) , Salt
- 1/2 cup(s) , Soft Bread Crumbs
- 1 tablespoon(s) , Butter

Place zucchini in salted water and simmer 5 minutes; drain. Turn into shallow 1 1/2 quart casserole dish. Top with mixture of ricotta cheese, shredded Monterey Jack cheese, beaten eggs, dill and salt. Bake uncovered in 350 degree oven for 15 minutes. Mix bread crumbs with melted butter and sprinkle on top of cheese mixture. Bake an additional 15 minutes. Makes 6 servings. |
