Great Eggplant Casserole

 Choose large firm deep purple eggplants for this recipe. This is delicious and ready in less than an hour.

INGREDIENTS:
  • 1 large , Eggplant
  • 1 large , Onion Sliced
  • 1/2 cup(s) , Sharp Cheddar Cheese Shredded
  • 1/2 teaspoon(s) , Worcestershire Sauce
  • 1 large , Garlic CLove
  • 10 whole , Soda Crackers Crushed
  • 1/2 cup(s) , Half and Half
  • 0 to taste , Salt and Pepper
  • 1 tablespoon(s) , Butter

Instructions:
Peel and cut eggplant into 1 inch cubes. Add onion and cook in a small amount of boiling salted water until tender, about 5-10 minutes; drain. Mix with cheese, Worcestershire sauce, garlic, cracker crumbs and cream. Season with salt and pepper. Spoon into a greased casserole and dot with butter. Bake at 350 degrees for 20 minutes.
