Catfish Stew

 Catfish stew is a delicious stew made generally in the South. It's not to fishy, just right.

INGREDIENTS:
  • 2 pound(s) , Catfish
  • 2 medium , Onions Diced
  • 1 large , Green Bell Pepper Diced
  • 10 1/2 ounces , Tomato Puree
  • 16 ounces , Canned Tomatoes Diced
  • 0 to taste , Salt
  • 0 to taste , Worcestershire Sauce
  • 2 slice(s) , Bacon Diced
  • 1 large , Garlic Clove Minced
  • 2 medium , Potatoes Diced
  • 1 large , Carrot Diced
  • 0 to taste , Sweet Basil
  • 0 to taste , Tabasco Sauce
  • 1/4 cup(s) , Fresh Parsley Chopped

Instructions:
Place fish in soup pot. Cover with water; add a little salt. Simmer until fish is just done (about 20 minutes).
Strain, reserving liquid. Flake fish off bones and set aside. Lightly sauté onion and garlic with bacon until lightly browned. Add fish broth, green peppers, carrots, potatoes, tomatoes and seasoning to taste. Simmer for at least one hour. Add fish and cook a few minutes longer. Serve in bowls; sprinkle parsley on top. Makes about 3 quarts.
