Shrimp Creole

 This is a dish I made in culinary school and fell in love with it.

INGREDIENTS:
  • 1/2 cup(s) , Oil
  • 1/4 cup(s) , Flour
  • 2 pound(s) , Raw Shrimp Peeled and Deveined
  • 1 large , Garlic Clove Minced
  • 1/2 cup(s) , Onion Minced
  • 1/2 cup(s) , Green Bell Pepper Chopped
  • 2 tablespoon(s) , Fresh Parsley Chopped
  • 1/2 cup(s) , Water Warm
  • 2 teaspoon(s) , Salt
  • 0 to taste , Hot Pepper Sauce
  • 16 ounces , Tomato Sauce

Instructions:
Make a light brown roux using flour and oil. Add shrimp and cook 3 minutes over low heat. Add garlic, onion, green pepper and parsley and saute 2 minutes. Increase heat to medium and gradually add water while stirring. Add remaining ingredients, bring to a boil, then lower heat to simmer and cook for 1 hour. Stir occasionally. Serve over steaming rice
