INGREDIENTS:
- 1 pound(s) , Jumbo Shrimp Butterflied
- 1/2 cup(s) , Crabmeat
- 1 cup(s) , Bread Crumbs
- 1/2 cup(s) , Mushrooms Finely Chopped
- 1/4 cup(s) , Onion Finely Chopped
- 1/4 cup(s) , Celery Finely Chopped
- 1/4 cup(s) , Parsley Chopped
- 1 large , Egg Slightly Beaten
- 1/2 cup(s) , Parmesan Cheese Grated
- 1 teaspoon(s) , Garlic Minced
- 1 teaspoon(s) , Fresh Lemon Juice
- 0 as needed , Butter
- 0 to taste , Salt and Pepper

While broiler is preheating, saute the onions, celery and garlic with 1Tbsp. butter, until just slightly cooked. Add mushrooms, pepper and lemon juice; stir and cook 2-3 minutes, then remove from heat and mix in the rest of the ingredients. Place equal portions of stuffing on top of each Butterflied Shrimp, then press stuffing down slightly to keep it in place. Place the Shrimp in a single layer in a greased baking dish and sprinkle with a little grated cheese. Place the Shrimp about 5" from the heat of the preheated broiler and broil until the Shrimp are cooked - about 5-6 minutes. Be careful not to overcook or the Shrimp will get tough. |
