INGREDIENTS:
- 1 pound(s) , Crawfish Tails Peeled
- 1/2 pound(s) , Rotini Pasta
- 1/4 pound(s) , Tasso
- 4 large , Garlic Cloves Minced
- 2 cup(s) , Heavy Cream
- 1 1/2 cup(s) , Shallots Chopped
- 1/4 cup(s) , Fresh Parsley Finely Chopped
- 4 tablespoon(s) , Butter
- 2 teaspoon(s) , Salt
- 1 teaspoon(s) , White Pepper
- 1/2 teaspoon(s) , Cayenne Pepper

Cook pasta according to package directions, being careful not to overcook; rinse in cold water and set aside. Melt butter in a large skillet; dice tasso (ΒΌ") and saute in butter until lightly browned; add garlic, stir and cook (1 minute). Add Crawfish, cream, white pepper, cayenne and salt; bring to a boil and cook (1-2 minutes), or until slightly thickened, stirring often. Add pasta, mix in well and cook until pasta is heated through. Serve immediately. |
