Bluefish is more commonly found in atlantic coastal areas, but if it is available in your area, this is a great recipe to try. The tanginess from the mayonnaise and sour cream are well balanced by the subtleness of the bluefish. |

INGREDIENTS:
- 3 pound(s) , Bluefish Fillets
- 1 tablespoon(s) , Unsalted Butter
- 1 teaspoon(s) , Salt
- 1 teaspoon(s) , Pepper
- 1 1/2 cup(s) , Sour Cream
- 1/2 cup(s) , Mayonnaise
- 3 tablespoon(s) , Fresh Chives Chopped
- 3 tablespoon(s) , Lemon Juice

| Instructions: |
Preheat oven to 400 degrees.
Wash and pat dry the fillets. Butter a baking dish and place the fillets in it. Rub them with the salt and pepper.
In a bowl, combine the sour cream, mayonnaise, chives and lemon juice. Cover the fish with this mixture.
Bake for 20 minutes, or until the fish is firm and opaque all the way through. Then set under a broiler for 5 minutes to brown. |
