INGREDIENTS:
- 2 medium , Alaskan Pollock Fillets
- 2 cup(s) , Zucchini Shredded
- 3 tablespoon(s) , Parmesan Cheese Grated
- 2 tablespoon(s) , Dry White Wine
- 2 tablespoon(s) , Dried Breadcrumbs
- 1 tablespoon(s) , Scallion Finely Chopped
- 1 tablespoon(s) , Fresh Parsley Finely Chopped
- 1/4 teaspoon(s) , Basil Crushed
- 0 to taste , Salt and Pepper

Season Pollock Fillets with salt and pepper. Place in individual baking dishes, tucking ends under if necessary so thickness will be even throughout piece. Combine zucchini, 2 Tbsp. cheese, bread crumbs, parsley, green onion and basil; salt and pepper to taste. Arrange zucchini mixture around Pollock, then sprinkle with wine and remaining cheese. Bake at 450° F Fillets (allowing about 10 minutes cooking time per inch of thickness, measured at its thickest part), or until fish flakes easily when tested with a fork. |
