INGREDIENTS:
- 2 pound(s) , Fish Fillets
- 1/2 cup(s) , Olive Oil
- 3/4 cup(s) , Lemon juice
- 1 teaspoon(s) , Mint Chopped
- 1/2 teaspoon(s) , Salt
- 1/8 teaspoon(s) , Cayenne PEpper
- 4 ounces , Greek Olives
- 0 to taste , Lemon Wedges

Butter a broiling pan. Blend the olive oil, lemon juice, chopped mint, salt and pepper. Beat with a wire whisk. Place the fillets in the pan. Spoon the sauce over each fillet and broil. Baste frequently until side is done. Turn over and repeat for other side. Fish should flake easily at touch of fork, about 10 minutes. Garnish with olives and lemon wedges. Serves 6. |
