Baked Flounder

 Flounder is sometimes hard to find (depending on where you are) but if you can get it, please do. It is a wonderful fish.

INGREDIENTS:
  • 1 large , Flounder
  • 1/4 cup(s) , Oil
  • 1 stick(s) , Butter Melted
  • 1 large , Lemon Juice of
  • 1/2 teaspoon(s) , Garlic Salt
  • 1/4 cup(s) , Parsley Chopped
  • 6 medium , Lemon Wedges

Instructions:
Preheat oven to 425 degrees. Place flounder (white side down) on oiled baking sheet. Brush rest of oil on top (black side). Bake 5 to 10 minutes, or until black skin pops and bubbles. Remove from oven. Lower heat to 350 degrees. Carefully remove all black skin and discard. Baste fish with melted butter, lemon and garlic salt mixture. Return to slower oven for 5 to 10 minutes more, basting occasionally. Remove to heated platter. Pour remaining butter over fish. Sprinkle with parsley and decorate with lemon. Mansfield, Texas
