INGREDIENTS:
- 2 tablespoon(s) , onions chopped
- 2 teaspoon(s) , margarine or butter
- 2 teaspoon(s) , flour
- 1/2 cup(s) , fat-free chicken broth
- 4 ounces , canned pineapple chunks in juice
- 2 teaspoon(s) , chutney
- 1/2 teaspoon(s) , curry powder
- 1/2 pinch , salt and pepper
- 1/2 cup(s) , ham Diced
- 1/2 cup(s) , Rice Cooked
- 1 to taste , Orange Rind Fresh Grated

Saute the onion in the hot margarine for 2 to 3 minutes. Add the flour and cook for another 2 or 3 minutes, stirring. Gradually mix in the broth and some of the pineapple syrup, stirring until thickened. Blend in the chutney, curry powder, salt and pepper and simmer for 10 minutes, thinning with extra broth if necessary.Taste and adjust the seasonings. Add the pineapple and ham, and heat thoroughly. Serve over hot cooked rice mixed with freshly grated orange rind |
