INGREDIENTS:
- 1 pound(s) , Ground Beef
- 1 tablespoon(s) , Chili Powder
- 1/2 teaspoon(s) , Paprika
- 1/4 cup(s) , Onion Chopped
- 1/4 teaspoon(s) , Ground Black Pepper
- 1/8 teaspoon(s) , Ginger Minced Fresh
- 2 whole , Jalapeno Peppers Chopped
- 1 small , Jar of Enchilda Sauce
- 5 whole , Flour Tortillas
- 3 cup(s) , Cheddar Cheese Shredded

Combine beef, chili powder, paprika, onion, pepper and ginger in medium skillet. Cook until beef is thoroughly cooked and onions are tender. Drain beef. Return to skillet and add enchilada sauce (and jalapeno peppers if desired); heat through. Place 5 halves of tortillas in greased 8x8 pan to cover bottom. Four should have the flat edge facing the pan sides & the fifth should cover the center gap. Layer with half of the beef/sauce mixture. Top with half of the cheese. Repeat the layers to use remaining ingredients. Bake at 350 degrees for 20 minutes or until cheese is fully melted |
