INGREDIENTS:
- 4 pound(s) , Boneless Beef Roast
- 1 cup(s) , Cider Vinegar
- 2 medium , Onions Slices
- 0 to taste , Salt
- 6 whole , Peppercorns
- 3 whole , Bay Leaves
- 8 whole , Cloves
- 2 tablespoon(s) , Vegetable Oil
- 1 medium , Tomato Peeled and Chopped
- 2 tablespoon(s) , A.P. Flour
- 1 pinch , Sugar

| Instructions: |
Place meat in a large bowl.
Add the vinegar, onions, salt, peppercorns, bay leaves, and cloves.
Marinate for at least two days (not more than 4). Turn at least once a day.
Remove meat from marinade.
Strain liquid, discard the solids.
Heat oil in a saucepan, add meat and brown on all sides.
Add the tomato and marinade liquid.
Cover and simmer gently 1 to 2 hours, until meat is tender.
Remove meat from juices.
Whisk flour and sugar into pan juices.
Cook until sauce has thickened.
Serve with meat |
