Mexican Beef Casserole

 This is a great one pot dinner idea for any night. it's easy to make and delicious.

INGREDIENTS:
  • 2 pound(s) , Ground Beef
  • 1 large , Onions Chopped
  • 1 can(s) , Cream Corn
  • 1/2 teaspoon(s) , Salt
  • 2 whole , Eggs Beaten
  • 1/3 cup(s) , Oil
  • 8 ounces , Cheddar Cheese
  • 4 whole , Hot Chili Peppers
  • 1 cup(s) , Cornmeal
  • 1 teaspoon(s) , Baking Soda
  • 1 cup(s) , Buttermilk

Instructions:
Brown beef; add onions, peppers and cheese. Sift together meal, salt
and soda. Combine sifted mixture with beaten eggs, buttermilk, oil
and corn. Pour half of the bread mixture in a deep greased skillet or
casserole dish. Add meat mixture and top with remaining bread
mixture. Bake at 350 degrees for 45 minutes
