INGREDIENTS:
- 1 1/2 pound(s) , Swordfish
- 1 cup(s) , Olive Oil
- 1/4 cup(s) , Dijon Mustard
- 1/4 cup(s) , Lemon Juice
- 3 tablespoon(s) , Shallots Minced
- 2 large , Garlic CLoves Minced
- 1 tablespoon(s) , Fresh Dill Chopped
- 1 teaspoon(s) , Salt
- 1/2 teaspoon(s) , Pepper

Cut swordfish into 2 inch chunks. In a mixing bowl, combine oil, mustard, lemon juice, shallots, garlic, dill, salt and pepper. Add fish and gently stir so that it is entirely cooked with marinade. Marinate at least 3 hours.
Prepare charcoal fire or preheat a gas grill or the oven broiler. Thread swordfish onto 4 (12 inch) skewers and grill or broil for 10 to 15 minutes, turning frequently and basting with reserved marinade until fish tests done. Place skewers on serving platter, drizzle with any remaining marinade that has been cooked and serve. Yield: 4 servings. Preparation time: 20 minutes. Cook time: 15 minutes. |
