Blackened Tuna

 Quickly sear the tuna to keep the middle rare for the best taste

INGREDIENTS:
  • 1/4 cup(s) , Olive Oil
  • 2 tablespoon(s) , Lime Juice
  • 6 medium , Tuna Steaks
  • 1 tablespoon(s) , Dry Mustard
  • 2 tablespoon(s) , Fresh Parsley
  • 1 teaspoon(s) , Black Pepper

Instructions:
Combine oil and lime juice and brush on tuna steaks. Combine dry ingredients and sprinkle over both sides. Cover with plastic wrap and refrigerate several hours. Grill over hot coals 4 minutes to a side. Serve with a sauce made of 2 tablespoons lime juice, 1 tablespoon white vinegar, 2 tablespoons olive oil and grated peel of 1 lime. Makes 6 servings.
