Mushroom Quesadillas

 Large meaty portobello mushrooms and jack cheese stuffed into tortillas and grilled

INGREDIENTS:
  • 1/4 cup(s) , Olive Oil
  • 2 medium , Tomatoes Seeded and Diced
  • 1 teaspoon(s) , Garlic Minced
  • 4 large , Portobello Mushrooms Stems Removed
  • 3 cup(s) , Fresh Spinach Leaves Stemmed
  • 8 large , Flour Tortillas
  • 1 1/3 cup(s) , Pepper Jack Cheese Shredded

Instructions:
Preheat grill to medium. Combine oil and garlic in small bowl. Brush caps with garlic oil. Spoon remaining garlic oil over mushroom gills. Grill mushrooms, gill-sides up, 4 to 6 minutes. Slice in 1/4 inch strips and season with salt.
Place 4 tortillas on lightly oiled grill rack. Top with spinach, portabellos, cheese, tomatoes and 4 remaining tortillas. Grill 1 to 2 minutes until lightly toasted. With a wide spatula, carefully flip and toast other side 1 minute. Cut each Quesadilla into quarters. Serve with your favorite salsa or guacamole.
