Herbed Veal Chops

 Fresh Herbs are a wonderful thing when they are in season. This is a delicious dish that can be fixed in a very short amount of time.

INGREDIENTS:
  • 6 tablespoon(s) , Olive Oil
  • 3 tablespoon(s) , Fresh Lime Juice
  • 3 large , Garlic CLoves Smashed
  • 6 tablespoon(s) , Fresh Flat Parsley Finely Chopped
  • 2 tablespoon(s) , Fresh Rosemary Finely Chopped
  • 3 tablespoon(s) , Fresh Marjoram Coarsely Chopped
  • 4 medium , Rib Veal Chops
  • 0 to taste , Salt and Pepper

Instructions:
In a dish large enough to accommodate the 4 chops, combine olive oil, lime juice and garlic; sprinkle half of each of the herbs on top. Season chops with pepper and set in marinade. Turn the chops over several times to coat both sides well. Sprinkle the remaining herbs on top of the chops and turn several times. Cover loosely with plastic wrap and set aside at room temperature to marinate, 20 to 30 minutes.
Heat a grill or grill pan to hot. Season the chops with salt and place on grill. Cook until chops are medium rare, about 1 1/2 minutes on each side. Remove from heat and transfer to a serving dish. Arrange the chopped summer salad on top of the chops and serve. Serves 4.
