INGREDIENTS:
- 4 whole , Game Hens Cleaned and Flattened
- 1/4 cup(s) , Dijon Mustard
- 1/4 cup(s) , Butter Melted
- 3 large , Garlic Cloves Minced
- 1 teaspoon(s) , Rosemary Crushed
- 1 teaspoon(s) , Lemon Juice
- 1 teaspoon(s) , Black Pepper

Wash game hens thoroughly, cutting off any excess folds of skin. Mix remaining ingredients together in a bowl. Lightly coat each hen, reserving about half of the mustard butter mix. Place on preheated grill on medium heat, or indirectly if your using coals. Turn occasionally. After 30 minutes recoat with remaining mustard butter. Cook until done (about 15 to 30 minutes more). Serves four. |
