INGREDIENTS:
- 2 tablespoon(s) , E.V.Olive Oil
- 1 tablespoon(s) , Lime Juice
- 2 large , Garlic CLoves Minced
- 1/2 teaspoon(s) , Fennel Seeds Cracked
- 1/2 teaspoon(s) , Salt
- 1/4 teaspoon(s) , Pepper
- 4 large , Chicken Breasts Boneless and Skinless
- 1 tablespoon(s) , Unsalted Butter
- 2 teaspoon(s) , Shallots Minced
- 2 cup(s) , Fennel Thinly Sliced

| Instructions: |
Combine olive oil, lime juice, garlic, fennel seeds, salt, and pepper in a shallow baking dish. Rinse chicken and blot dry. Place chicken in baking dish and turn to coat. Marinate 1 hour.
Remove chicken from marinade and scrape off any excess. Grill chicken about 6 minutes on each side or until done. Heat butter in skillet over medium heat. Add shallots and saute about 3 minutes. Add sliced fennel, season with salt and pepper, toss briefly, and cover. Allow fennel to steam about 5 minutes or until quite limp. Serve chicken on a nest of the fennel. |
