Down South Beer Can Chicken

Cooking a chicken with a beer can inserted into the cavity helps keep the bird moist during cooking and adds a great flavor. If you don't like beer, don't worry, you will not really taste it, and your children will not be consuming any alcohol...just in case you are worried about that.
This recipe is for one chicken, but do as many as you want for a crowd using the same recipe |

INGREDIENTS:
- 1 whole , Chicken Rinsed and Patted Dry
- 1 can(s) , Beer
- 1 small , Onion Quartered
- 2 large , Garlic Cloves Smashed
- 0 as needed , Cajun Seasoning
- 1 medium , Rosemary Sprig Broken

| Instructions: |

Rinse and dry the chicken inside and out. Using pliers, expand the opening of the beer can. Place the onion, garlic and rosemary into the can. Rub cajun seasoning liberally ovet the inside and outside of the chicken. Place the beer can into the cavity of the chicken and carefully rest it on the grill over indirect heat. Cook on a medium fire with wood chips if desired for 1 hour or until leg and thigh easily separate |
