Barbeque Turkey Sandwiches
Submitted by: John
These are especially good when made with leftover grilled turkey.

INGREDIENTS:
  • 1 whole , Small Red Onion(thinly sliced)
  • 1 cup(s) , Red Cabbage(finely shredded)
  • 1/4 cup(s) , Red Wine Vinegar
  • 1 pound(s) , Cooked Turkey Meat(cut into matchstick-size strips)
  • 3/4 cup(s) , Barbecue Sauce
  • 1/4 cup(s) , Turkey Broth
  • 4 whole , Sandwich Buns

Instructions:
Combine first 3 ingredients in medium bowl. Let stand at room temperature for about 2 hours until onion softens, tossing occasionally; or cover and chill up to 1 day.
Combine turkey, barbecue sauce, and broth in medium nonstick skillet. Bring to simmer over medium heat. Reduce heat to low; simmer for about 5 minutes until heated through, stirring often. Arrange bottoms of buns on plates. Spoon turkey mixture onto buns. Using tongs, pile pickled-onion mixture on top of turkey. Cover with top halves of buns.
