Oyster Martinis with Beluga Caviar

 This is a delicious appetizer. Oysters and caviar are quite romantic, so this is a great dish for lovers to eat together.

INGREDIENTS:
  • 1/4 cup(s) , Shallots Minced
  • 4 tablespoon(s) , Chives Chopped
  • 1/3 cup(s) , Champagne Vinegar
  • 3 tablespoon(s) , Fresh Cracked Pepper
  • 36 whole , Oysters in Shell
  • 0 as needed , Crushed Ice
  • 2 ounces , Beluga Caviar

Instructions:
Combine the shallots, chives, vinegar and pepper to make a mignonette sauce and reserve. Shuck oysters, loosen muscle from bottom shell, then remove top shell.

To assemble hors d'oeuvre: Place the shells on a bed of crushed ice. Place an oyster inside each shell. Top each with a teaspoon of mignonette sauce and a dollop of caviar.
