This is my second Italian recipe in a row, so I guess I am craving some sicilian goodness. No Italian collection of recipes would be complete without a great pizza dough recipe. Pizza has to be one of my favorite meals. Papa Johns, Pizza Hut, or Dominos can’t compete with a good homemade pizza. Making pizza can be a great family activity as well. One of my first cooking memories was putting on pizza toppings with my Grandmother. I hope you enjoy!
2 1/4 teaspoons dry yeast
3 1/4 cups all-purpose flour
1 1/2 cups water (warm)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon brown sugar
Pour the warm water in a large bowl.
Put the yeast and brown sugar in the water and let it dissolve for 10 minutes.
Stir the oil and salt into the newly formed yeast solution.
Mix in the 2 1/2 cups of all-purpose flour.
On a well floured surface, knead the dough with the remaining flour until no longer sticky.
Once you are done kneading, place the dough in a well oiled bowl.
Cover the bowl with a cloth and let the dough rise for about 1 hour.
If you are baking the pizza dough in an oven on a pan, preheat the oven at 425 degrees.
Cook the pizza dough in a lightly oiled pan for 15 minutes before placing sauce or toppings.
Once you place the toppings, cook until cheese and crust is a golden brown.

1 1/2 pounds ground beef
1/2 pound ground pork (If you don’t want pork replace with ground beef)
2 large eggs
2 cloves garlic (minced)
1 cup Romano cheese (freshly grated)
2 cups Italian bread (dried and crumbled)
1 1/2 tablespoons parsley (chopped)
1 1/4 cups water (warm)
1 cup olive oil
black pepper (to taste)
salt (to taste)
In a large bowl mix the ground beef and pork together.
Add in the eggs and stir thoroughly.
Mix in the garlic, parsley, salt, pepper, and cheese.
Slowly mix in the bread crumbs while adding in a 1/4 cup of water at a time until all of the bread crumbs and all 1 1/4 cups water is mixed in.
From the meat mixture, shape meatballs into your desired size.
Take a large skillet and heat the olive oil.
Fry a few meatballs at a time until they become very brown and slightly crisp.
After each batch of meatballs are fried, drain them on a paper towel.

1/4 cup butter
1 cup heavy cream
1 1/2 cups parmesan cheese (freshly grated)
1/4 cup parsley (chopped)
1 clove garlic (crushed)
In a medium size saucepan, melt 1/4 cup of butter over medium to low heat.
Add the cream to the saucepan and let it simmer for about 5 minutes.
Whisk in the parmesan cheese and garlic and heat thoroughly.
Stir in the parsley.
Serve over your favorite pasta.
This is for you seafood lovers. This shrimp scampi recipe is excellent and is relatively easy to make. Why go to your favorite italian or seafood restaurant when you can make this delicious home cooked meal yourself? If you like shrimp scampi, you will like this recipe.
1 package fettuccine noodles
2 pounds shrimp (peeled and deveined)
1/2 green pepper (chopped)
6 white mushrooms (sliced)
1/4 cup white onion (chopped fine)
4 cloves of garlic (minced)
1/4 cup white wine (dry)
3/4 cup butter (can substitute low calorie butter or olive oil)
4 sprigs parsley (chopped)
2 tablespoons lemon juice
salt and pepper (to taste)
In a large pot, cook the fettuccine noodles according to package directions.
In a large skillet add the butter, onion, parsely, garlic, green pepper, and mushrooms and saute at a medium to high heat until tender.
Reduce the heat and add shrimp to the skillet while stirring frequently for 5 minutes. Cook until done.
When finished, serve shrimp and vegetables over the fettuccine.
One of my favorite meals to eat is lasagna. If you are looking for an easy lasagna recipe, this is the one for you. It isn’t a complicated lasgna recipe like others I have seen and it tastes great!
1 pound lean ground beef
8 ounce package of lasagna noodles
1/2 cup onion (chopped)
8 ounces mushrooms (optional)
1 16 oz jar spaghetti sauce (your favorite brand)
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon dried basil
1 teaspoon dried oregano
1 1/2 cups ricotta cheese
3/4 cup grated parmesan cheese
2 cups shredded monterey jack cheese or mozzarella
Open package of lasagna noodles and cook according to package directions.
After they have cooked, drain noodles and set aside.
In a large skillet, brown beef, onion, and mushrooms.
Drain the grease from the skillet.
Now add the spaghetti sauce, oregano, salt, garlic powder, and basil to the skillet and stir.
Pre-heat the oven at 350°.
In a 2-quart buttered baking dish, carefully and evenly layer 1/3 of the noodles, 1/3 of the spaghetti sauce and 1/3 of the ricotta cheese, Monterey Jack cheese or mozzarella, and Parmesan cheeses.
Repeat these layers twice.
Bake the lasagna at 350° for 30 minutes, or until cheese is bubbly.
