1 large ripe avocado (peeled and pitted)
1 teaspoon lemon juice
1/4 cup salsa (not too chunky)
1/4 teaspoon garlic powder
salt (a dash or to taste)
chili powder (a dash or to taste)
In a medium to large bowl, mash the advocado with a fork until farily smooth.
Add in the lemon juice and stir throughly.
Stir in the 1/4 cup of salsa until completely mixed in.
Now add in the garlic poweder, salt, and chili powder and mix well. You don’t want clumps of powder in your guacamole.

1/4 cup butter
1 cup heavy cream
1 1/2 cups parmesan cheese (freshly grated)
1/4 cup parsley (chopped)
1 clove garlic (crushed)
In a medium size saucepan, melt 1/4 cup of butter over medium to low heat.
Add the cream to the saucepan and let it simmer for about 5 minutes.
Whisk in the parmesan cheese and garlic and heat thoroughly.
Stir in the parsley.
Serve over your favorite pasta.

2 pound beef roast
6 potatoes (halved, your choice if they are peeled)
3 onions (peeled and cut into fours)
1/2 cup water (cold)
4 carrots (peeled and cut into smaller pieces)
salt (to taste)
pepper (to taste)
Take out your crock pot and put the vegetables in the bottom.
Place your 2 pound pot roast on top of the vegetables.
Add salt and pepper to taste.
Pour the water into the crock pot.
Set the crock pot to simmer on low for 8 to 10 hours.
When the meal is done, it should be so tender that the meat should almost fall apart with a fork.
Salisbury steak is a meal that costs very little to make and is easy to prepare. This is a salisbury steak recipe with a flavorful onion and mushroom gravy. This meal will take you about 30 minutes to make. I hope you enjoy!
1 pound of lean ground beef
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup bread crumbs (dry)
1 white onion (sliced)
1 egg (large)
6 ounce can of mushroom pieces
2 teaspoons cornstarch
2 tablespoons water
10 1/2 ounces of beef stock
In a medium size bowl mix the lean ground beef, pepper, egg, and bread crumbs together.
Take the mixture and form 4 patties about 3/4 of an inch thick.
Over medium heat, take a skillet and cook the patties on both sides until brown.
If any fat gathered in the skillet, drain it off.
Now add the beef stock, mushrooms, and onion to the skillet and heat the skillet until it begins to boil.
Once it comes to a boil, reduce the heat and let it simmer until the ground beef is fully cooked.
Remove the ground beef patties and set them on a plate. Cover them to keep warm.
Heat the onion mixture that remains in the skillet until it begins to boil. When it reaches that point, mix the water and cornstarch in and let it boil for 1 minute.
Turn the stove top off and place eash ground beef patty on it’s own plate.
Spoon the onion and mushroom gravy over top of each patty.
Easy Meatloaf Recipe

I have been posting a lot of easy recipes lately and here is another one. If you like meatloaf, here is an easy meatloaf recipe for you. Once you see how simple this recipe is, you won’t feel intimidated from cooking a meatloaf.
1 1/2 pounds lean ground beef (I recommend lean because I don’t like a greasy meatloaf)
1/2 cup dry bread crumbs
1 cup of milk (2% milkfat)
1/2 cup ketchup (you can substitute barbecue sauce)
1 tablespoon worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon dried sage
1 small white onion (chopped fine)
1/2 teaspoon dry mustard
2 cloves of garlic (minced)
Preheat the oven to 350°.
Excluding the ketchup, put all the ingredients in a large bowl and mix thoroughly.
Place the contents of the bowl into an ungreased loaf pan as evenly as possible.
Spread the ketchup (or barbecue sauce) evenly on top.
Bake the meatloaf for 1 – 1 1/4 hours. It is done when no pink remains in the center.

1 cup cooked chicken breast (cubed)
1/8 cup onion (chopped fine)
1/2 teaspoon sugar
1/8 cup celery (chopped fine)
1/3 cup mayonnaise (you can substitute with miracle whip salad dressing)

In a medium size bowl, place the chicken and onion inside and mix.
Add the celery, sugar, mayonnaise, and salt and pepper.
Mix all the ingredients thoroughly and refrigerate until you are ready to use.
Spanich rice is something that can go with any mexican meal. If it’s taco night, make some spanish rice to compliment the meal. This is a real easy spanish rice recipe that tastes so good.
2 cups of water
1 cup of rice (uncooked)
1 can of tomatoes (chopped wth juice)
2 tablespoons of vegatable oil
1/4 cup of white onion (chopped)
1/2 cup of green pepper (chopped)
1 teaspoon salt
1 teaspoon chilli powder
1 teaspoon ground red pepper
1/8 teaspoon black pepper
In a small pot pour in the oil and brown the onion and green pepper.
Add the water and tomatoes with juice.
Add the rice and spices and stir thoroughly.
Cover the pot and cook on a low heat.
The rice should be done in aproximately 20 minutes.
One of my favorite meals to eat is lasagna. If you are looking for an easy lasagna recipe, this is the one for you. It isn’t a complicated lasgna recipe like others I have seen and it tastes great!
1 pound lean ground beef
8 ounce package of lasagna noodles
1/2 cup onion (chopped)
8 ounces mushrooms (optional)
1 16 oz jar spaghetti sauce (your favorite brand)
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon dried basil
1 teaspoon dried oregano
1 1/2 cups ricotta cheese
3/4 cup grated parmesan cheese
2 cups shredded monterey jack cheese or mozzarella
Open package of lasagna noodles and cook according to package directions.
After they have cooked, drain noodles and set aside.
In a large skillet, brown beef, onion, and mushrooms.
Drain the grease from the skillet.
Now add the spaghetti sauce, oregano, salt, garlic powder, and basil to the skillet and stir.
Pre-heat the oven at 350°.
In a 2-quart buttered baking dish, carefully and evenly layer 1/3 of the noodles, 1/3 of the spaghetti sauce and 1/3 of the ricotta cheese, Monterey Jack cheese or mozzarella, and Parmesan cheeses.
Repeat these layers twice.
Bake the lasagna at 350° for 30 minutes, or until cheese is bubbly.
