Growing up in Michigan we had plenty of apple orchards. My Grandmother used to bake the best Apple Cinnamon cakes. They were so good that I would request them for my birthday. I hope you enjoy this Apple Cinnamon Cake Recipe! It’s making me hungry thinking about it!
Ingredients:

3 large eggs
1 1/2 cups granulated sugar
3/4 cup vegetable oil
2 cups all-purpose flour
1 1/2 tablespoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
3 Granny Smith apples, peeled, cored and sliced
Instructions:

Heat oven to 325°F (160°C).
Grease an 8-inch square baking pan.
In large bowl, beat eggs, sugar, and oil until thoroughly blended.
Add the cinnamon, baking soda, flour, and salt. Stir until blended into the mixture.
Stir in apples.
Pour the batter into the pan and spread evenly. Bake for 65 to 70 minutes or until you can stick a toothpick in center and it comes out clean.
Ice cream and cool whip are a nice compliment when serving.
