This is my second Italian recipe in a row, so I guess I am craving some sicilian goodness. No Italian collection of recipes would be complete without a great pizza dough recipe. Pizza has to be one of my favorite meals. Papa Johns, Pizza Hut, or Dominos can’t compete with a good homemade pizza. Making pizza can be a great family activity as well. One of my first cooking memories was putting on pizza toppings with my Grandmother. I hope you enjoy!

Ingredients:
——————–
2 1/4 teaspoons dry yeast
3 1/4 cups all-purpose flour
1 1/2 cups water (warm)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon brown sugar

Instructions:
——————–
Pour the warm water in a large bowl.
Put the yeast and brown sugar in the water and let it dissolve for 10 minutes.
Stir the oil and salt into the newly formed yeast solution.
Mix in the 2 1/2 cups of all-purpose flour.
On a well floured surface, knead the dough with the remaining flour until no longer sticky.
Once you are done kneading, place the dough in a well oiled bowl.
Cover the bowl with a cloth and let the dough rise for about 1 hour.
If you are baking the pizza dough in an oven on a pan, preheat the oven at 425 degrees.
Cook the pizza dough in a lightly oiled pan for 15 minutes before placing sauce or toppings.
Once you place the toppings, cook until cheese and crust is a golden brown.

French toast isn’t really that hard to make, so you shouldn’t be intimidated. The following is the best french toast recipe that I have tried and I highly recommend. This recipe will serve a family of 4, but if you are serving more or less you can adjust according. Enjoy!

Fall is here and it is time for bread. One of my favorite breads to make is banana bread. I have cooked from some banana bread recipes that resulted in some pretty dry bread. I don’t know about you, but I like my bread moist. The texture and taste is just so much better. I finally have a recipe that I really like. The following is a moist banana bread recipe. Enjoy!

Ingredients:
————
1 cup butter (softened)
2 cups sugar
3 cups flour
7 large bananas (ripe and mashed)
4 eggs (beaten slightly)
1 1/2 teaspoons vanilla extract
2 teaspoons baking soda
1/2 teaspoon salt

Instructions:
————-
This banana bread recipe makes two loaves.
Stir the butter and sugar in a bowl into a creamy mixture.
Blend the eggs, vanilla extract, and bananas together into the bowl.
Add in the sugar, flour, baking soda, and salt by whisking them into the bowl one by one.
Pour the banana bread mixture into two greased 9×5 inch loaf pans.
Preheat oven to 350°.
Once the oven is heated, place the loaf pans in the oven and bake. Check the bread after 35-40 minutes. The bread may take up to 60 minutes to fully cook.
It is done once you can insert a toothpick in the middle and it comes out clean.
Let the banana bread cool in the pan for 10 minutes on a wire rack before serving.

Fall is around the corner and nothing says fall like fresh baked pumpkin bread. This pumpkin bread recipe makes 2 loaves. If you make your own pumpkin, substitute the 16 ounce can for 2 cups of fresh cooked pumpkin. This recipe is using canned pumpkin because the majority of people will be using that.

Ingredients:
————
16 ounce can of canned pumpkin
3 cups sugar (can substitute 3 cups of splenda)
2 tablespoons baking soda
4 eggs (beaten)
1 1/2 teaspoons salt
2 teaspoons nutmeg
1 cup vegatable oil
2 teaspoons cinnamon
1/2 teaspoon allspice
3 1/2 cups all-purpose flour
2/3 cup water (only 1/2 cup of water if using fresh cooked pumpkin instead of canned)

Instructions:
————-
Preheat oven to 350°.
Take a large mixing bowl and stir in the flour, allspice, cinnamon, sugar, nutmeg, and salt.
Once mixed, add in the water, oil, eggs, and pumpkin and stir until thoroughly blended.
If you are having trouble mixing by hand, try using an electric mixer.
Take 2 loaf pans (9×5) and lightly grease and flour them.
Pour mixture evenly into loaf pans.
Place loaf pans in the oven and let bake for 1 hour.
To test if it is done, place a clean knife in the center of the loaf and if it can be removed cleanly, then it’s done.
