One of my favorite meals to eat is beef stroganoff. It is a nice, warm and hearty meal that is hard to resist going back for seconds. This beef stroganoff recipe can take a little time to get prepared, but it well worth the effort. I hope your family enjoys!
1 pound of beef tenderloin (thin cut, 1 inch by 2 inch long strips)
6 ounce can mushroom pieces
6 tablespoons of butter
1/3 cup onion (chopped)
1/8 teaspoon nutmeg
1 cup sour cream (room temperature)
1/2 teaspoon tarragon (dry)
1 tablespoon water
salt to taste
pepper to taste
In a large skillet over medium heat, melt 3 tablesppons fo butter.
Add the beef strips to the skillet and cook over med-high to high heat.
The beef will cook fast and you need to add salt and pepper while browning the beef on both sides. Once both sides of the strips are browned, remove the beef from the skillet and place in a bowl.
In the same skillet, add the onion and cook over medium heat. Let the onion soak up some of the meat juices and cook for 2 minutes.
Remove the onion and place in the same bowl as the beef strips.
Using the same skillet again, melt 3 tablespoons of butter.
Over medium heat, add in the mushrooms, nutmeg, and tarragon while stirring for about 4 minutes.
Reduce the heat to low and add the sour cream to the skillet. Becareful to watch the heat so that the sour cream doesn’t curddle.
Add the beef strips and onion from the bowl into the skillet.
Add salt and pepper to taste and cook thoroughly.
Serve the stroganoff immediately over noodles or mashed potatoes.
